The Pacific rockfish has a mild/medium, sweet, and nutty flavor with a firm, meaty, and medium-flaked texture. Our Pacific rockfish comes from the cold, clean waters of Alaska and is skin-off and pin bone out. The Pacific rockfish is commonly mislabeled as snapper on the West Coast and it has a distinctly different flavor and texture profile than the true warm water snapper found in Florida and the tropics. There are over 100 species of rockfish along the West Coast and Alaska, each with slightly different characteristics. Red rockfish is the species that we most regularly source and distribute.
