Freshness depends on great sourcing and a rapid cold-chain. We purchase all of our fish by determining the balance between time-to-market and original quality. For example, if there is a huge run of Sockeye up the Frasier River with super bright fish, we will buy and sell this fish over a more-famous Alaskan fish if we can get the Frasier River Sockeye to you with 36 hours less time out of the water.
