Corvina is a generic name for the Red drum or redfish of which there are over 250 species. Corvina is like a warm water snapper and is mild, sweet, flaky, and semi-firm. It is important to note that, unlike Red snapper or opakapaka, corvina is not to be eaten raw or served in a sashimi-like preparation like ceviche. Corvina is unbelievable when grilled and it is extremely forgiving under high heat. Our corvina comes from Central and South America where fishing pressures are less than they are in the Southeastern US waters.
