Tombo tuna is a warm water albacore species found in the tropics, sub-tropics, and warm temperate Atlantic, Pacific, and Indian Oceans. Epicurean Seafood sources its Tombo tuna primarily from Hawaii but will receive fish from the Southwest Pacific when migratory patterns change throughout the year. Tombo out of the Hawaiian fishery, which is well-managed and sustainable, is extremely high quality and highly valued for its high fat content and deep pinkish red color. This product is sashimi grade, like #1 Ahi tuna, but is typically cooked or seared. Tombo is caught using longlines, handlines, and by trolling, and average around 60-70 pounds round weight. It is typically flown to the West Coast within a day of being caught and we ship out the fresh loins and steaks daily.
